8. OPERATION
8.1 General principles of grinding technology
Material must be removed in order to resharpen a blunt cutting edge. A sharp cutting edge can be
obtained only if the knife/blade is sharpened right to the front of the cutting edge.
The only way it is possible to check whether the cutting edge has actually been ground is by the burr.
If a burr has occurred at the cutting edge, the grinding operation can be completed at the cutting edge.
A blade/knife with a burr on the cutting edge is, however, not yet really sharp. The cutting edge
achieves its final sharpness only after the burr has been removed.
The polishing brush is used to remove the burr.
However, not only sharp cutting edges but also long service lives are required.
The service life of a cutting edge is influenced chiefly by the cutting edge angle. The smaller the cut-
ting edge angle, the longer the service life will be theoretically. However, in practice, it is the case that
the cutting edge will break off and thus no longer be sharp if the cutting edge angle is too small.
The cutting edge angles are therefore between 15° and 35°. With cutting edge angles of less than 15°,
the cutting edge becomes so unstable that it breaks with minimum resistance. If the cutting edge angle
is greater than 35˚, the cutting edge is, admittedly,
extremely stable but the service life will not be as long.
One other criterion for the properties of the cutting edge is the cutting edge profile. There are three dif-
ferent ground profiles:
Tapered grinding Convex grinding Concave grinding
Convex ground surfaces can generally be found on cutter blades and hand knives. Tapered and con-
vex ground surfaces can predominantly be found on circular knives and blades.
The following always applies:
The profile and the cutting edge angle specified by the manufacturer must be complied with.
